Apple cake

Good old classic.  I love the aroma when baking this cake...  

My neighbors who live across the street have two apple trees (one of them is over 140 years old, and other one is called "winter apple" which has the harvest season slightly later than other sorts.) I have been lucky to receive baskets full of apples, and this is a great way to enjoy apples!  

 

Ingredients:

125 g butter/margarine - softened to room temperature

125 g sugar

 

200 g flour

1 tsp vanilla sugar

1/2 tsp salt

2 tsp baking powder

3 eggs

Apples - peeled, cored, and sliced

 

For the sprinkle:

ca. 2 tbs raw sugar/brown sugar

Cinnamon

 

Directions:

1) Heat oven ca. 180 C degrees with fan.

2) Combine flour, vanilla sugar, salt, and baking powder and shift for a few times.

3) Using an electric mixer, whip margarine/butter.

4) Add sugar little by little into margarine/butter.

5) Add egg one at a time, whip more, and add another egg.  Continue whipping.

6) Add shifted flour mix into margarine/butter, and mix with wooden spoon until "just blended." Do not mix too much.

Tips: the dough should be heavy so that it can hold apple's weight.

7) Pour the dough into greased cake form. Flat them with spoon.

Tips: The center of the cake is the last place to be baked.  So little trick to make the center somehow "shallow" than edges.

8) Lay apples and sprinkle sugar and cinnamon.

9) Bake in the lowest wrack of the oven for about 35 minutes or until golden brown.

Tips: If the center of the cake is left uncooked, cover the cake with aluminum foil with a hole in the middle.  Then continue baking until it is baked through.
