Vitamins - basic info

Vitamins can be divided into two categories: water-soluble and fat-soluble.

"What does that mean?" my friend asked me.

So here is the quick guide on vitamins.

 

Water soluble vitamins: Vitamin B group, Folic acid, Vitamin C

It is not possible to store these vitamins in the body as they will be discharged with urine or sweat.  Thus, it is important to ingest every day.

Not registant to heat or alkaline.  

 

Fat soluble vitamins: Vitamin A, D, E, and K

It is possible to store these vitamins in our body.  Heat resistance, and by cooking with oil, it helps to be absorbed into out body.  However, carotene is easy to be oxidized.  Thus, it is recommended to cook them without leaving them long after slicing.
