What to do with leftovers?: Potato to Croquette

I had a bag of potatoes which were sort of forgotten, and they are getting to be "sad looking."  So it was time to give it a new light!  I looked at "what else we have in fridge," and decided making "Croquette" in Japanese style.

Croquette is actually French word, but this dish is available all over the world with different ingredients.  However, main ingredients stay the same: potato. 

Here, I have used ground beef, garlic, and onion - just basics.  Then I found half-eaten "brie" and knew that my husband won't finish eating them soon.  So I cubed brie and place one in center of croquette. 

 

Ingredients: This recipe can make about 20 croquettes.

ca. 1 kg Potato 

1 onion - finely chopped

1/2 Chinese garlic (you can use 1-2 usual garlic clove) - finely chopped

ca. 400 g ground beef (this can be replaced by flake of cooked fish.)

 

Optional filling:

Soft cheese - dice.  

Tips: Creamy cheese, such as brie or Camembert melts well when fried.  I also tried Jarlsberg, but it became a bit chewy...

 

To taste:

ca. 1 tbs size of butter

ca. 2 tbs Crème fraîche or sour cream

salt and papper

 

For the crumb:

Flour

Egg - beaten

Panko or Bread crumbs 

 

Oil for frying.

 

Directions:

1) Make mashed potatoes.  While it's hot, add a cube of butter and ca. 2 tbs Crème fraîche or sour cream.  Set aside.

2) Slowly fry garlic and onion in a frying pan.

Tips: Frying onion slowly bring up such a round sweetness!

3) Fry ground beef until brown.

4) Mix onion, garlic, and ground beef into mashed potato.

5) Add salt and papper to taste, and mix well.

6) If you use cubed cheese, insert a piece in the center and make an oval balls.  (If you don't use cheese, just make balls.)

7) Dust the balls into flour, beaten egg, and Panko (or bread crumbs)

8) Deep fry until golden brown.
